Level 1 Introduction to Plant Based Vegan Training is a certificate course focused on improving people's skills on using non-animal plant based products to make mainstream vegan dishes that taste amazing, and to develop dishes that meet health and food allergy objectives, as well as understanding how respecting religious or belief dietary requirements can be a pathway to larger acceptance of plant based vegan cuisine.

COURSE LOCATION

Our in person Level (L1) Training is conducted in English at our center in Palma Mallorca Spain by English speaking instructors.

 

EXAMPLE CURRICULUM

 

The foundation of the training is focused on understanding how to create desired flavors using all parts of the plant kingdom. The training evolves to help you understand preparation techniques to reach desired textures, aroma and appearance.Areas covered (changes seasonally) may include how to use and create spices and mixes, nuts, legumes/beans, sea plants, mushrooms and fungi, grains, roots and shoots, and coconuts. The following is a sample of recipes you may learn during your course:

  • Summer Hours: Monday- Friday 10H-13H, 30 minute break, 13:30H-3:30H (6 hours a day, 10 sessions)
  • Note: In summer months with high climate, academy hours may start earlier and end earlier

 

HOW OUR TEACHING WORKS

Vegan Gastronomy Culinary Academy's cooking school is a niche/specialty school in the art of elaborating vegan dishes. The training program is for using your existing skills as a skilled home cook, aspiring chef, restaurant or hotel cook or chef and taking it to the next level. The series is offered in ten (10) sessions spread over 5 days. The course provides the building blocks of plant based vegan cuisine to replace conventional dishes that use animal based products. 

 

Our classroom/teaching style is master class demonstration by instructor followed by students making and recreating the same dishes. A small portion of training encourages and demonstrates to students how to elaborate their own dishes based on skills learned during their training.

MEALS

During your course you will be sampling and tasting dishes during each course you create. Students will be creating 6-8 recipes a day used in multiple dishes and will be given short breaks to taste and eat dishes. Any leftovers can be taken from the academy in student supplied container.

CERTIFICATION REQUIREMENTS

Upon completion of the course you will be issued a Certificate of Completion.To receive a Certification of Completion from our academy program that you can use on your CV or to pursue other employment opportunities you must complete the following:

  • Attend all courses and participate in projects
  • Comply with code of conduct

EXPERIENCE NEEDED:

There is no specialized experience needed to take this course but basic kitchen experience is suggested. This is a course primarily designed for students that are experienced home cooks, or existing restaurant cooks, that want to expand the portfolio by adding international dishes to their portfolio.

CLOTHING & EQUIPMENT

We provide you an apron to wear at the academy during training. You are required to wear black t-shirt, long black pants, and comfortable closed toe shoes.  You are not required to bring any kitchen equipment unless you would like to bring your own chef knives. We provide you all tools including knives, blenders, forms, dehydrator, etc.

NOT INCLUDED

The following are not covered in tuition price.

  • Travel to and from academy in Mallorca Spain, Dublin Ireland or Sydney Australia
  • Room/Accommodations are not included in pricing. You can ask our Admissions department for suggestions on places to stay.

NOTES

  • This course is NOT Gluten Free and anybody who is intolerant, allergic or is a celiac must know that gluten is used at our academy. We do teach Gluten Free recipes but it must be known that there is no way for us to guarantee any cross-contamination.
  • We do use products that are readily available from grocery stores that are vegan. We do at times also teach you to make selective products where it can improve flavor, reduce cost, or improve texture and taste.
  • We attempt where possible to use organic produce (based on availability)
  • We do not adjust recipes in class for dietary needs or personal preferences, however we are happy to offer advice on how to achieve alternative results for when chefs return to their kitchens.

    Im excited and satisfied about the content of the course and what I've learned during these intense two weeks.

    I'm rating the course a four because of the balance between the information and the practical part. The information that was given was a perfect fit for me, very interesting and learned a lot from the knowledgeable instructors. The practical part of the course was nicely put together in well structured of various components.
    Why a four and not a three; the proclaimed content of the course fits the experience I had. Although I always try to enter everything with an open mind, the expectation I did had where met in many levels. Everything is taken very seriously and although in my cultural background I am not used being graded this way, they put a lot of thought in it.
    When would it be a perfect five for me; personally i would have gained even more practical knowledge when there was more time to show different outcomes with specific techniques. In hence side I would have liked to have more solution-based and feedback on given tasks. But this is a personal preference and this would be helpful to me to understand the new techniques more profoundly. For me as a newby in the more professional culinary world I experience that the instructors are very skilled and capable in their trade. Props to all of them!
    Although I've noticed that there is a great investment in effective communication I feel there is a lot to gain still. Specially in the intercultural communication. Because the course is very international oriented and therefor a lot of different cultures in one group. I've personally enjoyed this a lot and In my personal opinion there could be some adjustments to refine the quality of the course.

    Overall I'm very great full for the whole experience of being amongst beautiful people who have similar ideas and values!

    The course was very informative. Being new to veganism, I feel I've learnt alot about nutrition. The best part was using new ingredients, meeting new people and challenging myself to do better each time.

    The course was quite intense at times and on day one I was shaking to finish my vinegar dots on m salad but I learned a lot, the teachers were great and helpful there was a lot of instruction on both the recipes and nutrition. Would recommend the course for anyone interested in expanding their knowledge of vegan cooking.

    I came into this class with an open mind looking to expand my knowledge in vegan cuisine. Before this class, I was especially hoping to learn new skills to apply to my work place at a vegan restaurant. Given my two goals, I can say that this class exceeded my expectations and I learned so much from the instructors and my peers. The diverse classroom (students from all over the world) is such a rare opportunity to be a part of. I think that one of the biggest take-aways from this experience was the connections I developed here. The instructors are eager to help you connect with people in the industry globally, which is incredible! Each day covered a new topic which kept things interesting and exciting. We did a myriad of different challenges that were aimed at helping us understand and apply the material we learned. I really appreciated the hands-on learning style, that catered to people of all culinary or non-culinary backgrounds. I recommend to anyone with the privilege of affording this experience!

    Pros
    - Exposure to over 100 recipes- with ingredients and techniques used
    - Culinary instructors have a lot of knowledge on technique and flavours
    - A lot is packed in to this course so the onus is on you to keep up and be proactive in getting what you want out of the course.
    - the academy has developed its own line of products that are great. They will elevate your vegan cooking to another level. .

    Cons
    - Not always enough time to ask questions in class, but students do have access to ask questions over email
    - Delivery of the sessions can be improved by having just 1 instructor deliver the materials (my personal preference).. Having interjections here and there by multiple instructors breaks up the flow.
    - Details of how to run a vegan business were interjected here and there. Would have been better to have a session soley for this topic.

    Overall, I would recommend this course, but be ready to be hard working, professional and focused.

    This class was packed with a variety of information fit to help anyone start off in the world of vegan cooking. Classes were fast paced and projects were challenging so there was never a dull moment.

    The course was very intense, we made a lot of fantastic food and got a lot of information. I have learned so much.

    We were people from all over the world (China, Peru, USA, Mozambique, India Australia, UK, Turkey, Belgium and more) participating the course. It was a great experience to meet all these different people and cultures.

    The teachers were very professional and had much knowledge of nutrition, food, health, environment and science; it was very exciting.

    I´ll give my biggest recommendations to Vegan Gastronomy Culinary Academy.
    Level 1 course was my fourth course and definitely not my last.

    Intensive vegan course

    The classes pack a lot of interesting information about the world of plant-based cuisine (its environmental and nutritional impact) in between sessions of preparing lots of different dishes. The tempo of the classes simulates a real world kitchen environment. The last week focuses mostly on developing your own recipes with a partner which is really challenging if you're not that experienced in the kitchen. This is a course for people who want to work in the kitchen / come up with their own recipes to get inspired and challenged to take their cooking skills to the next level.

    Great program to expand your knowledge in vegan cuisine and nutrition. Lot of practical, useful information for home practice or entering the market. Huge variety of topics, access to resources and network, great teachers and professional environment. And of course the best team ever!
