VEGAN CUISINE (L1) is a certificate course focused on improving people's skills on using non-animal plant based products to make mainstream vegan dishes that taste amazing, and to develop dishes that meet health and food allergy objectives, as well as understanding how respecting religious or belief dietary requirements can be a pathway to larger acceptance of plant based vegan cuisine.

EXAMPLE CURRICULUM
The foundation of the training is focused on understanding how to create desired flavors using all parts of the plant kingdom. The training evolves to help you understand preparation techniques to reach desired textures, aroma and appearance.Areas covered (changes seasonally) may include how to use and create spices and mixes, nuts, legumes/beans, sea plants, mushrooms and fungi, grains, roots and shoots, and coconuts. 

HOURS/DAYS

  • Monday- Friday 10H-13H, 1 hour lunch break, 14:00H-17:00H (6 hours a day, 10 sessions)

HOW OUR TEACHING WORKS
Vegan Gastronomy Culinary Academy's cooking school is a niche/specialty school in the art of elaborating vegan dishes. The training program is for using your existing skills as a skilled home cook, aspiring chef, restaurant or hotel cook or chef and taking it to the next level. The series is offered in ten (10) sessions spread over 5 days. The course provides the building blocks of plant based vegan cuisine to replace conventional dishes that use animal based products. Our classroom/teaching style is both masterclass demonstration by instructor followed by students making and recreating the same dishes and hands on training encouraging and demonstrating to students how to elaborate their own dishes based on skills learned during their training.

MEALS
During your course you will be sampling and tasting dishes during each course you create. Students will be creating 6-8 recipes a day used in multiple dishes and will be given short breaks to taste and eat dishes. Any leftovers can be taken from the academy in supplied containers. We are a cooking academy and not a restaurant. While you make dishes and we have tastings, containers are provided for you to take food away to have during midday and after school breaks.

    Intensive vegan course

    The classes pack a lot of interesting information about the world of plant-based cuisine (its environmental and nutritional impact) in between sessions of preparing lots of different dishes. The tempo of the classes simulates a real world kitchen environment. The last week focuses mostly on developing your own recipes with a partner which is really challenging if you're not that experienced in the kitchen. This is a course for people who want to work in the kitchen / come up with their own recipes to get inspired and challenged to take their cooking skills to the next level.

    Great program to expand your knowledge in vegan cuisine and nutrition. Lot of practical, useful information for home practice or entering the market. Huge variety of topics, access to resources and network, great teachers and professional environment. And of course the best team ever!

    Lots of topics, good insights in to all forms of plant based food available. Comprehensive course for someone without a background of vegan concepts, various analogs, raw food and seaweeds. Great Learning experience!

    Really exciting class that offered a lot of information. Not for anyone who is looking to slack off as the course is quite rigorous especially during the first week. Overall a wonderful experience. The class was fun and motivated me to do my best. Thank you for the time in Palma!

    This course is very fast paced and covers a lot of information. I appreciated just how much they were able to teach us in such a short period of time. I think this is a perfect course for people new to vegan cooking.

    Great Course with a good base for chefs and advanced homechefs. Maybe too packed with information and projects for non-professionals. Great variety in classes.

    Challenging but so much fun!

    The level 1 course was exhausting but I had so much fun!

    I have been vegan for 3 years and I love to cook. This course seemed to combine my two favourite things: vegan food and traveling. You don't have much time during the course to go and explore. The classes had something to offer for everyone and we also got to learn a lot about the nutrional science. I loved that part. The courses consist of theory you need to study and getting some hands on expercience during the workshops. Twice a day we could sit down and enjoy the food everyone made. The people I met during this course are all amazing! The instructors, but also the other students. We came from all over the world and there was such a great vibe. I made friends for life. I do advise other people taking this course to come to Mallorca some time before the course start or to stay longer after. You won't be doing a lot of sightseeing during the course. You are just so tired from all the hard, but rewarding work! So take some extra days to relax and enjoy the island. The trip to the cactus farm was amazing but there is so much more to see on the island. Don't miss it!

    Great if you want to work in a kitchen

    Great for those wanting to work in a kitchen or start their own Vegan food business. You will learn a lot! Recommend if you have a good level of cooking skills already and are wanting to expand your knowledge. If you are a true beginner in the kitchen you may get a little left behind.
    Amazing pool of resources in the recipes, student portal and chefs. Not for the lazy or those looking for a relaxing holiday as the hours and workload are intense. Homework and exams every lunch time and evening and often no real lunch break at all. Overall a rewarding and memorable experience.
