The Vegan Pastry course is designed to take students through the world of "Veganizing" the pastries from around the world. The course travels through the world of common omnivore desserts that use milk, egg, and other non vegan dairy products and shows alternative solutions found in the world of seeds, nuts, yeasts, undersea plants, and modernist ingredients like #PotatoProtein.

  • 5 Day Intensive Course
  • Location: Palma Mallorca Island Spain
  • 10H-16:30H (10am-4;30pm) - includes 30 min break
  • Over 30 Hours of Vegan training 
  • Extensive theory and reference materials are provided. 
  • Certificate of Completion issued upon completion.

The pastry training program is aimed at all those who are passionate about pastry whether novices or with experience. This curriculum is focused on teaching the vegan version of traditional pastry foundations from around the world. The school curriculum has been structured so that students can learn the techniques, step by step to build and plate 2-4 pastries per lesson using vegan pastry foundations. Lessons cover how to veganize the following style desserts:

  • Local Mediterranean Delicacies
  • Sponge Cakes
  • Choux-style Pastries
  • Butter & Short crust Pastry
  • Cold & Frozen Desserts
  • Boulangerie/Breakfast pastries
  • Yeasted Breads
  • Chocolate
  • Gluten-free
  • Gateaux
  • Entremet
  • Confection & Cookies

Students will also learn various plating and decorating techniques.

    The duration -5 days intensive course- was perfect for me and my husband! We really enjoyed the daily activities and learned a lot from Jessica, Stephanie and Manuel. Lots of health and baking tips from all of them. Personally, I love the vegan raw magnum ice-cream ---- that was marvelous!!! And the frazier cake, so delicious! I didn't realize I could bake like a professional! With my experience in the Pastry Course, I look forward to attend all the other courses of the Vegangastronomy.

    Question/Suggestion: Is it possible to give a copy of the videos (in a CD) to the students for keepsake and future reference even if the students have to pay for it???

    I took the pastry course and was the best experience I had in all my life. Chefs are so good in what are doing, they put so much passion in everything and trust me, Jessica can veganize anything!! I've learned a lot of new things and techniques. Recipes? AMAZING! You will impress anyone with them.

    El curso te hace experimentar un ambiente multicultural, Tanto de las personas de todas partes del mundo que asisten a las clases, como de las diferentes recetas que hacemos y postres que creamos. Si desean tener experiencias en un ambiente único, esta cocina es la experiencia que probablemente buscas. Llevaré todo lo aprendido conmigo, de igual manera que se agradece el entusiasmo que dan al ser creativo al momento de crear platos.

    I've leanerd a lot, macarons, meringue and entremet were the best part, I was really surprise with the result of the recipes. Very unique techniques!

    Hacia tiempo que queria hacer un curso avanzado en pastelería Vegana ,la experiencia a sido buena . he aprendido algunas técnicas mas que me servirán para mi trabajo y para mi . son 2 semanas intensivas donde uno puede aprender y profundizar en los postres veganos. Luego Mallorca es una isla preciosa para descubrir mientras aprendes a hacer postres deliciosos!

    I felt the pace of the course was suited to my learning style and very much look forward to going back through the material and trying out all the recipes at home! I appreciated instructors patient manner and presentation style which helped promote great enjoyment of the class.
