XIOTA is a colorless powder that is extracted in liquid form from Eucheuma Denticulatum red seaweed also known as Iota Carragenean.  It produces a soft and “fluffy”, elastic gel. XIOTA is used to create thick and fluffy textures in both savory and sweet dishes. It dissolves while cold and is heated to about 80°C for gelification.
