Dessert Bars, Candy Bars also known as Dessert Buffets are a popular offering for events such as Weddings, Baby showers, Birthdays, Hotels/Resorts or Corporate events. The demand for this style of food presentation continues to grow. As more and more clients are driven to a stand up or "cocktail style" event where guests can move around, socialise and have access to smaller bite sized food that can be eaten whilst standing up.
RECIPES INCLUDE
- Rose Lychee Macaron Gluten-Free Rose flavoured Vegan macaron filled with dairy-free rose petal cream, lychee confit and garnished with raspberry.
- Tiramisu iconic Italian dessert. Layers of coffee soaked biscuit sponge, mascarpone cream with a hint of chocolate. Served in a small glass aka parfait/verrine style. The perfect pick me up spoon dessert.
- Exotic Tart Crisp Sablet tart shell, Citron poppyseed sponge, Yuzu Cream garnished with vegan meringue, passionfruit confit and a hint of Jasmin.
- Gourmet Brownie Bites Decadent Chocolate Pecan Brownie, chewy maple caramel coated in a chocolate glaze with crunchy crystalised chocolate pecan morsels.
- Strawberry & Matcha Cheesecake Aromatic grassy notes from the Matcha paired with sweet strawberries and Tahitian vanilla cheesecake mousse, biscuit crunch, layered with a soft biscuit sponge. Served in a small glass aka parfait/verrine style.
- Pistachio Madeleines Gluten-Free Pistachio soft cake, dipped in a dairy-free white chocolate shell with sour cherry confit.
- Salted Caramel Praline Mini Eclairs Gluten-Free mini choux finger filled with a vanilla bean cream, caramel praline, topped with a salted caramel ganache.
While there will be some Gluten Free options available during the course, it is not the focus of this course or of Vegan Gastronomy Culinary Academy. The school uses traditional sweeteners in recipes. Instructors can make suggestions for refined sugar-free or artificial sweeteners on a case by case basis, but we do not use these sweetener substitutions. Students will also learn various plating and decorating techniques.
HOW THE COURSE WORKS
- Students are provided access to course materials including recipes for students to develop buy lists
- Students have 6 weeks to complete course
- Course is combination of pre-recorded and On-Demand training videos that can be watched at any time during the 6 weeks
- Students are required to select a certain amount of recipes to complete to receive a Certificate of Completion.
CERTIFICATION
To receive a certificate for Vegan Dessert Bar, you must complete a minimum of 5 assignments within the 6 week time frame. Once you complete the course, you will be issued a Certificate of Completion.
PREREQUISITES FOR ONLINE COURSE
There are no prerequisites. The training program is aimed at all those who are passionate about plant based and vegan food, whether novices or those with experience.
NEEDED FOR ONLINE COURSES
Our ONLINE courses require students at a minimum to have the following:
- You must have a phone number we can dial, we will not accept orders without telephone numbers
- Computer or Smart Phone
- Internet Connectivity
- Facebook Account (required)
- Camera or Phone Camera
Basic equipment is needed depending on the course and the extent you want to take your training. For all of our courses you will need a blender, cook top, oven, etc. We recommend a food processor, stand or hand mixer, a thermometer, measuring spoons and a scale. Specialty equipment like Ice Cream makers, Thermal blenders like Thermomix, Dehydrator are completely optional.
